Retrieved from an olive quality and its first pressing, produces oil with fruity scent and flavor. This is the highest quality olive oil.
Virgin Olive Oil
The virgin olive oil is obtained directly from olives too. However, it doesn´t have the qualities of a oil extra virgin so it has different process during elaboration: milling, decantation, centrifugation or filtration.
This oil contains only refined olive oils and virgin olive oil with a free acidity, expressed as oleic acid, of not more than 1 g per 100 g. These degrees are not related to the intensity of flavor, but are a guideline to classify olive oils.
